 PROFESSIONAL DEVELOPMENT CENTER

"The interpreter scene prior to 1964 was so vastly different from that which exists today that it is a strain on the imagination to contemplate it ... We did not work as interpreters, but rather volunteered our services as our schedules permitted. If we received any compensation it was freely given and happily accepted, but not expected." - Lou Fant, RID biographer

VEGETARIANS ARE VARIED...

DISCLAIMER, the information below is not meant to be medical advice, and not to diagnose health issues. I am not a medical doctor, this is information was gathered from various naturopathic articles and health information, that I have found personally effective to support my own health and longevity.

Why would you ever want to give up all your favorite foods and go vegetarian?

A: Because all the processed, boxed, packaged, dead food and animal foods are killing you!

If You Are Going Vegan/Vegetarian

First of all, I never recommend going vegetarian cold turkey, in other words over night. How I became a vegetarian was a long and slow process that was not forced but rather a natural transition to learning about what my body needed and did not need. I am still in transition, I  am 75% raw foods and my next goal is 99%. Never try to go from 0 to 100%, it will traumatize your entire system, physically, mentally, emotionally, and spiritually. Baby steps are your best bet.

I recently heard a person call themselves a vegetarian and watched them eat a chicken salad sandwhich and when I inquired, "You eat chicken as a vegetarian"  response: "Yes, but I never eat red meat!

Wikipedia says: A vegetarian does not eat meat, including game, poultry, fish, crustacea and shellfish, and may also abstain from by-products of animal slaughter such as animal-derived rennet and gelatin.Various foods or treats, such as cake, chocolate, chips, gum, marshmallows and gummy candies, often contain unfamiliar animal ingredients, and may especially be a concern for vegetarians due to the likelihood of such additions. While some vegetarians are unaware of animal-derived rennet's role in the usual production of cheese and may therefore unknowingly consume the ingredient, others of the diet are not bothered by its consumption.

According to doctors, for a healthy and increased lifetime we need to be eating foods rich in folates like asparagus, beets, bok choy, broccoli, kale, legumes, melons, oranges, spinach, sunflower seeds, turnip greens all folate rich. Folic acid aka folate, is a vitamin that is water-soluble and needed for the production of healthy blood cells, DNS synthesis and is necessary for cell division.

Folate can also decrease the amino acid homocysteine, that is linked to heart disease. Also low levels of folate can cause a deficiency in the blood known as anemia.

Research has recently found a link between low levels of folate and depression. The recommended daily allowance (RDA) for women is 400 micrograms and 600 micrograms for pregnant women. 400 micrograms for men.

To keep your spirits up, a cup of cooked lentils provides 90% of the RDA of folic acid. The protein and fiber will keep you feeling satisfied longer, stabilize blood sugar, all will promote you a better mood.

Increase Your Vitamin B6

Eat B6 foods: avocados, bananas, broccoli, brussels sprouts, collard greens, garlic, potatoes, red bell peppers, sunflower seeds, and watermelon. Chicken Breast for non vegans. A banana is a quick fix for the blues and feeling down.

Vitamin B6 helps maintain healthy blood sugar levels, and increases the amount of oxygen carried to your tissues. Low levels can lead to an increase of homocysteine, anemia, headaches, and depression. Vitamin B6 plays a role in red blood cell metabolism of protein and synthesis of serotonin and dopamine neurotransmitters in the brain.

The RDA for adults from age Adult age to 50 is 1.3 mg a day and approx. 1.6 mg a day for people over the age of 51.

Veganism, Vegetarianism

 What's it all about?

Vegans: Do not eat flesh such as red meat, poultry or fish or seafood. The do not eat any by-products,  of the above named animals such as dairy products from a cow or Honey from a Bee, or eggs from a chicken. Vegans say "I do not eat anything that has or comes from something with a face and that breathes.  Anything less that this is not a VEGAN.

*Peta supporter Vegans will not wear or use anything that comes from an animal, the killing of an animal for a pair of shoes or a purse or jacket it repulsive to a vegan. The will not wear leather, silk, wool, or use lanolin, or gelatin.

*People for the Ethical Treatment of Animals (PETA)

What is important is knowing your body and knowing what you can and cannot tolerate physically.

Vegetarians who are OVO-LACTO, eat cooked foods and do not limit  their food use of animals like vegans.

The most common type of Vegetarian in most Western countries are

Ovo-Lacto Vegetarian: who also eats cooked foods like eggs and milk products, such as cheese, butter and any food product that has dairy as an ingredient. Cookies, Breads, Puddings, etc.

Lacto Vegetarianism eat mostly cooked foods and in common in India however, they also consume milk and milk products.

Veggie -- is a nick name for vegetables, and can be used as a nick-name for a VEGETARIAN.

What would you do if you knew....

LIFE CANNOT EXIST WITHOUT ENZYMES

We are born with a certain number of enzymes to support the body... it's like having an enzyme  bank account that we can make withdrawals from however, we can not make deposits.

There are 3 types of Enzymes... the kind in food, the kind in your digestive tract, the kind that supports every cell in your body, including but not limited to your brain, kidney, heart, lungs, liver, etc.  How our bodies work is like this...

We eat a salad and the saliva in the mouth alerts the enzymes in the digestive system that food is on its way to your stomach.

The live enzymes in a raw salad arrive in the stomach and the enzymes in the food match up with the appropriate enzymes in the digestive tract.

The Human  digestive system includes these enzymes  ptyalin, pepsin, trypsin, lipase, protease, and amylase. These are all the enzymes needed to digest food. The body cannot make cellulase, for digestion of fiber. Cellulase is introduced through  raw foods.

It is important to know that because  our bodies are not built to make the majority of the enzymes we need, after 30 years or so of constantly over-working the liver, pancreas, gallbladder and other organs by eating mostly cooked foods, our organs begin to fail. Then we begin to have side effects we start to have mild indigestion, upper and lower Gastro intestinal Tract problems and a variety of health problems including  cancer. We have simply tapped out our enzyme source and are killing ourselves off one organ at a time. Look around you and see how many people have heart problems, liver problems, kidney problems, gall bladder problems, pancreatic problems and so on.

Our bodies are smarter than we think.  It knows live food from dead food.  Our enzymes  digest for fat with "Lipotase", Dairy is digested with  "Lactase" "Protease"  digests Protein, "Cellulase" digests fiber, "Amanase" digests Carbohydrates  The enzymes are busy moving the food to its rightful places. Viola! the body is working at peak  performance.

Next Scenario,

Today, you are eating a garden burger, a baked potato, corn and canned peaches.

Your saliva sends the alert to the digestive enzymes...food coming down!!! The enzymes gather around waiting to find their perfect match.

But something else happens... When you cook food it kills 100% of all the enzymes in the food. So the digestive enzymes think its the enemy and calls for help... Help comes from the enzymes that support the entire body and every cell. When the system enzymes leaves the cells to come and help rid the body of the unknown substance by digestive enzymes... the cells atrophy, also known as, shrink! So your organs shrink, the heart, live, kidneys, lungs, etc. shrink... what does that mean? It means they age...get old and do not function as long as they were intended to function.

Moral to the story...

Eat more Raw food.

Start today eating more Raw foods in your diet and you will make less withdrawals from your enzyme account. Every time you eat raw food your system enzymes do not have to assist in eliminating unhealthy food from your body....

Start by adding least 50% raw foods to your meals... like fresh fruits and vegetable salads.
